Pişmaniye (peesh-MAHN-ee-yay) is an ancient Turkish sweet that dates back to the 15th century. It is also called "fairy thread", "string thread", "stretched thread", "thread thread" or "linen thread". English names “Candy Floss”, “Floss Halva”, “Cotton Candy.” There are many stories and local traditions around Niithalvaa. In Turkish, "pişman" means "regret". Turkish saying: “Try once and regret. Don't try and you'll regret it a thousand times.”
Preparation

Pişmaniye resembles cotton candy, but has a different texture and deeper flavor. Unlike cotton candy, it contains flour and butter. The sugar-rich mixture is pulled into a thousand fine threads. These threads are collected into balls and packaged like candy. Pişmaniyed comes in several varieties, plain or chocolate covered with ground pistachios or walnuts. Pişmaniyed is further flavored with vanilla or cocoa powder.

Making an authentic pişmaniye requires a lot of skill. It is traditionally made by hand. First, the flour is toasted with butter until lightly browned. Second, the sugar is melted with water to a pliable temperature, then pulled and folded many times until fibers begin to form. Finally, the flour is added and carefully mixed with the sugar with repeated pulling and folding motions. This process is repeated for several minutes until the fibers take the form of a fine thread.
Legend of Sismaniye and Pişmaniye

Many legends explain its origin. The most popular of them tells about a confectioner who lived in Kocaeli and was famous for his delicacies. People stood in long queues to try some of his famous treats. Even merchants detoured from the Silk Road to sample his delicious creations. Despite the success, the confectioner had concerns. Deeply in love with a lovely and curvy lady, he had tried everything to win her heart, but his love remained unrequited. Desperate, she decided to create a brand new sweet and dedicate it to her lover, hoping to get love back. He worked hard and created beautiful snow-white balls. In honor of love, he named the sweet "şismaniye", which means "my fat lady" in Turkish. He labeled it carefully and sent a few boxes to his beloved lady. This last effort worked and he managed to win her heart.

Soon they married and lived happily ever after, at least for a while. Then his new bride's jealousy and trickery made his life hell. Despite his great love, he left her and changed the name of the sweet from "şimaniye" to "pişmaniye", which means "regret".
